Description
This remarkable wine is made using a blend of 55% Chenin Blanc and 45% Chardonnay grapes, carefully harvested from dry-land vineyards in the Western Cape region. The vineyards are strategically positioned on south-west facing slopes, allowing them to benefit from the refreshing breezes that sweep in from the Atlantic Ocean and the cold Benguela current. The vineyards’ deep soils, enriched with decomposed granite and clay, offer excellent drainage and contribute to the wine’s exceptional quality.
Throughout the winemaking process, the grapes and juice undergo a meticulous 14-day fermentation at a controlled temperature of 14-15°C. With utmost care, the winemakers handle the process reductively, preventing oxidation and preserving the intrinsic fruitiness. To enhance complexity, the wine is left on lees for a period of 2 months. Finally, a gentle spun cone technology is employed to extract the alcohol while maintaining the wine’s distinctive body, color, and flavor. This delicate process takes place under vacuum and at low temperatures, ensuring that the wine retains its unique character, captivating color, and delightful flavor profile.
