During the winemaking process, the grapes undergo a 14-day fermentation at a controlled temperature of 14-15°C. Careful handling in a reductive environment prevents oxidation and preserves the fruity characteristics. The wine is then left on lees for a period of 2 months, enhancing its complexity and depth. Finally, a gentle spun cone technology is employed to remove the alcohol while maintaining the wine’s unique body, color, and flavor. This delicate process is conducted under vacuum and at low temperatures, ensuring the wine retains its distinctiveness and allure.
